Implementation phase 1: taproom

We’ve reached the first mission milestone: taproom launch. We’ve been open for two weekends, introduced four sake, hosted one chef pop-up, and learned an incalculable amount. We’re thrilled! And exhausted! And exhilarated! And can’t wait to do it again! We’re thankful to all who’ve been with us throughout this journey and ready to welcome all newcomers.

Sake is delicious and exploring its varied expressions is fun. For the last two weeks, we’ve offered two experimental (X) styles and two flavored riffs on those:

  • X-1 is a clear sake made with yamadanishiki rice, multiple yeast strains, and hard water. This dry sake has a mineralized body with culinary spice notes and complexity.

  • X-2 is a cloudy sake made with yamadanishiki rice and a single yeast strain (different than X-1), and soft water. This sake has big sweetness, zippy acid, robust fruit notes, and a full body.

  • Biodome sake is a dry-hopped version of X-1 using Nelson Sauvin hops, which bring pronounced melon and honey notes.

  • Home Colony is X-2 blended with pomegranate and Maine blueberries. The tartness of these fruits contrasts with the sweetness of the nigori sake.

The flavored sake are smaller experiments. When they run out, we’ll make other flavors available. The same is true of the X-series, but it will take a little longer to flip those over; we have X-3 and X-4 fermenting in tanks now. To know what’s on tap week to week, check out the Taproom page.

On our second Saturday, we had the folks from Wooden Noodles in for a ramen pop-up. Wow! Was that fun and yummy. We cannot wait to welcome in more chefs and introduce you to more sake pairings.
